🌿 Anti-Inflammatory Garlic Turmeric Rice

Ingredients
- 1½ cups basmati or brown rice, rinsed
- 2½ cups low-sodium vegetable or chicken broth
- 1 tbsp extra-virgin olive oil
- 5 cloves garlic, minced
- 1 tsp ground turmeric
- ½ tsp ground cumin
- ½ tsp ground ginger
- ½ tsp black pepper
- ½ tsp sea salt, or to taste
- ½ small onion, finely diced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh cilantro, chopped
- 2 tbsp toasted almonds or pumpkin seeds, optional
Instructions
- Rinse the rice under cold water until the water runs mostly clear. Drain well.
- Heat olive oil in a saucepan. Add onion and cook 2–3 minutes; add garlic for 30 seconds.
- Stir in turmeric, cumin, ginger, and black pepper. Cook 30 seconds until fragrant.
- Stir in rice and coat the grains with the spice mixture.
- Add broth and salt. Bring to a gentle boil.
- Reduce heat to low, cover, and simmer 15–20 minutes, until tender and liquid is absorbed.
- Remove from heat and rest covered for 5 minutes.
- Fluff with a fork. Stir in lemon juice and zest. Garnish with parsley, cilantro, and toasted almonds or pumpkin seeds.
